As they say, there´s no place like home! After completing his internship in the United States Carlos returned to Peru and helped Chef Mitsuharu Tsumura open Nikkei restaurant Maido – ranked 13th in San Pellegrino’s World’s 50th Best Restaruants.

Carlos arrives to Canberra, Australia and works in the Food and Beverage Management department of Rydges Hotels and Resorts.

Mr. Papa bursts onto the stage making our first appearance at the 2013 Multicultural Food Festival and Gold and The Incas Exhibition at the National Gallery of Australia.

Mr. Papa’s first food truck ‘Papita’ arrives to The Hamlet in Canberra’s trendy inner-city suburb of Braddon.

Mr.Papa expands fast as people fall in love with our Peruvian street food. Our food truck has a permanent home at The Hamlet, we have pop up food stalls at Canberra festivals and markets and we offer catering for any events, specialising in festival-style weddings.
